Easy Gluten-Free Meatballs and Sauce Prep
Meatballs are comfort food for me. I enjoy this recipe because it is so simple to prepare. The ingredients are common to have on hand, which makes this recipe great for a last-minute dinner.
Another great benefit of this recipe is that you can easily prepare it ahead of time. The meatballs can be flash-frozen to bake at a later time.
You can also prepare the meatballs the night before and bake the next day.
Hands Free Mess-Free Food Prep
I don’t know about you, but I do not like to get my hands in the meat mixture for the purpose of forming the meatballs.
It’s messy business.
For that reason, I came up with a simple yet effective way to combine the ingredients. A pastry blender works very well for blending everything while your hands stay mess-free.

Once the mixture is combined use a big cookie scoop to form the meatballs. This method is quick and virtually mess-free.
Meatballs will be in the oven and filling the house with a delicious aroma in no time!

Easy Gluten-Free Meatball Ingredients
- 1 lb ground beef
- 1 tsp salt
- 1/2 cup gluten-free oats
- 1 egg, beaten
- 1 cup sharp grated cheddar cheese
Topping:
- 1/4 cup brown sugar
- 2/3 cup ketchup
- 1 1/2 TBSP mustard
Combine the ground beef, salt, gluten-free oats, beaten egg, and grated cheese in a bowl using a pastry blender. I use a butter knife to scrape the blender clean when it gets too compact with the mixture. This part will only take a few minutes.
Next, use a big cookie scoop to form the meatballs. Place the meatballs in a baking dish until all of the mixture is gone.

Once the meatballs are in the baking dish, add the brown sugar, ketchup, and mustard to a bowl. Stir the sauce to combine then spoon evenly over each meatball.
For a few variations, I have used barbecue sauce in place of the homemade sauce with excellent results. Another option is to leave the meatballs naked (is that allowed?). They taste great even without sauce!

Bake the meatballs at 350 degrees for 45 minutes until they cook through, and the sauce is bubbly.
This recipe calls for 1 lb of beef, which should give you about 12 to 15 meatballs. My pictures show a doubled recipe that will make between 22-26 meatballs.

Your savvy tip for today is to prepare the meatball recipe in advance, and flash freeze it. Line a baking dish with parchment paper. Place the formed meatballs on the lined pan and put it in the freezer. Once the meatballs are frozen enough to remove without breaking their form, place them in a freezer bag for later use.
